OK, the secret is out!

We are about to offically change our name to Sweet! Cupcakes and Treats... and below is a snapshot of our new homepage.

Sweet! Cupcakes and Treats will be offering much more than Cupcakes... every Sweet! Treat imaginable from brownies, truffles, and coconut ice to lamingtons in pretty colours! All our products are made to order - no retail space (we're working on it though!), and everything except our cupcakes, mini-cakes and cakes (which includes lamingtons, sorry) can be shipped direct to you via Australia Post.

We are also offering customisable hampers, in small, medium and large sizes, which can be delivered to you, or to someone you know, as a gift.

You can get a preview of the whole site here; let me know what you think, and I will reward one commenter with some Sweet! treats!! Be quick though, as the new site will go live some time in the next week - we are only waiting on the ISP address to be assigned!

Still to come on the new site are a core group of cake decorating supplies and my own range of hand-made decorations, so look out for them soon. The Sweet! Boutique will also be expanded to include pretty things for cakes and treats, so keep checking back for the addition of these as the items come on range from my suppliers.

Long Distance Birthday Cupcakes!

These cupcakes were ordered all the way from Perth as a special surpirse for the birthday girl, who was spending her 21st celebrating with friends here in Melbourne.

They are a mixture of white chocolate and raspberry, and chocolate fudge cupcakes, all decorated with vanilla bean buttercream. Half the cupcakes were then dressed with a latte coloured sugarpaste flower and some fondant pearls, and the other half were dressed with an ivory butterfly with accents of chocolate brown royal icing, and some ivory mini blossoms.

The matching cutting cake was chocolate fudge, and waisted with an ivory chiffon ribbon.

Wedding Cupcakes!

White chocolate cupcakes, with pale blue embossed fondant over vanilla bean buttercream, and decorated with a small embossed white fondant heart dressed with a small blue blossom with a silver cachou centre.

The matching cutting cake of white chocolate was covered with white fondant over ganache, then decorated with royal icing piping painted with edible silver to match the embossing pattern on the cupcakes, and dressed with a pale blue and silver ribbon.

Wedding Expo Cupcakes

Yesterday I attended the Bridal Expo held at the Brighton Savoy. I was very blessed to have been requested to provide 3 displays for each of the function rooms at the Savoy.

Enchanted Mushroom Party Cupcakes

Vanilla bean cupcakes, topped with fairy pink fondant over vanilla bean buttercream.

Decorated with a sprinkle of magic fairy dust, and topped with a pair of magical mushrooms for fairies to rest under when tired, with some random hot pink royal icing polka dots as hightlights.

House Cake

This is a small cake, measuring 4" deep, 3-3/4" wide and 9" high.

It's a white chocolate cake, torted and covered with white chocolate ganache, and covered with rolled fondant.

All details were hand cut; the roof shingles, front door and plinth boards were detailed and applied individually. The brick pattern is all cut piece by piece.

Made for a first-time home owner.

Survivor Cakes

A few days ago, I received an email from Kat.

Kat lives in the back of beyond (well, beyond Rockhampton), and she is a cervical cancer survivor. Kat told me that while she was going through her treatments, looking at my cakes would cheer her up and help her get through the day.

I can't begin to tell you how touched I was by getting Kat's email.

To me, the rose is a symbol of strength. It will flourish and produce the most gorgeous blooms, even under the most trying conditions, which I though was a fitting symbol of Kat's (and other cancer survivors) battle to come back from such a horrible condition.

So Kat, these roses are for you.

I hope that you enjoy looking at them as much as I enjoyed creating them for you.

Christening Cupcakes!

This morning saw the Christening of the very cute and adorable Charlize Lily.

To celebrate, Chocolate Fudge cupcakes, with blush pink fondant over vanilla bean buttercream were selected.

The cupcakes are decorated with a ruffled white sugarpaste flower, some sugar pearls, and Charlize's initials in royal icing painted with pearlescence.

A sugarpaste plaque to match the invitations was made to sit at the top of the stand; a blush pink elephant with Charlize's Christening details in royal icing, and again painted with pearlescence.

Christening Cupcakes!

Our lucky last baby to be Christened this weekend was Maxwell John. His Christening was held at Number 8 Restaurant, at Crown Casino.

Max's cupcakes were all Vanilla Bean, dressed in two shades of Wedgewood blue fondant over vanilla bean buttercream, and decorated in alternating styles of a dark Wedgewood blue "tiffanty" butterfly with white pearl details, and pale Wedgewood blue twin fondant pearls dusted with blue lustre.

The matching cutting cake is also Vanilla Bean, dressed in pale Wedgewood blue fondant over white ganache, and decorated with "tiffany" butterflies to match the cupcakes, some ivory blossoms, and "Maxwell John" in royal icing to match the invitations.

Second christening cab off the rank this weekend (we had 3 all up!) was Mia. Mia's christening was held at Roselyn Court, in Essendon.

I love my clients!

Every now and then, I'll receive a last-minute order. Sometimes I can work them in to my other orders, and sometimes I can't. A couple of weeks back, I was able to help Debbie out with an order for her husband's birthday at the last minute. What with time constraints, I wasn't able to take any shots of the cakes before they were collected for the party.

Today I received a gorgeous email from Debbie thanking me for helping her out, and a shot of the cakes all set ready for their big night:

Grandma Judy baked a beautiful fruit cake, which we covered in the same blush pink fondant as the whimsical cupcakes, and decorated to match, with some pearlised royal icing piping to mark the ocassion.

FAQ's!

1. What flavours do you offer?
Just Cupcakes! flavour options are based on excellence in both flavour and texture, as we expect our cakes to taste as beautiful as they look. Our current flavour range includes: Chocolate Fudge, Vanilla Bean, Lemon Delicious, Mango Royale, White Chocolate and Raspberry, Dark Chocolate Almond, Caramel Mud, Classic Carrot, and White, Milk or Dark Chocolate Cakes.

2. I am not sure what design to choose!
At Just Cupcakes!, we believe that every cupcake that comes from our kitchen should match perfectly to the event that it is celebrating, and therefore, we spend as much time as necessary with you, well in advance of your event, to make sure that the finished design is as unique and original as you are. We also bring a design album of previous works for your inspiration, which you are also welcome to choose from.

Helpful things to consider when planning your cupcake design are:
* The theme of the day, for example, casual and laid back, or formal and elegant?
* The colours of the invitations, flowers and outfits chosen
* Any favourite design motifs that have already been selected for your event, such as butterflies, stars or the like.

We understand that the wedding cake is the focal point of the evening, and work closely with you to ensure that your ideas are brought to life.

3. How much can I expect to pay?
Our cupcakes vary considerably in price, however, as a guide, our cupcakes range from $4.50 to $10.00 each. The two influences on the price of your cupcake are design choice and quality.

It is difficult to provide an accurate price indication over the telephone, which is why we offer no obligation, free in-home consultations, where we also provide tasting samples for you to work from.

4. Does Just Cupcakes! deliver and set-up?
As we consider our cupcakes to be edible works of art, we do deliver and set-up your order as a standard service. The fee for this is based upon the location of your event.

5. Can you supply gluten-free cupcakes?
Although we attempt to accommodate all flavour choices, at this time we are not able to offer this option, as our recipes are only based upon wheat-based flours, and therefore cannot provide any guarantees of a quality cake result.

However, we are happy to decorate cakes that you provide, or recommend you to specialist suppliers.

6. When should I book my event?
For weddings and engagements, we prefer at least 2 months notice.

For birthdays and other occasions, we prefer a minimum of 2 weeks, but preferably 4 weeks notice.

During some periods of the year (Feb - April, and Sept - Nov), we book up very quickly, so if your event date is withing these periods, the sooner you book your date, the more likely it is that we can accommodate your order.

Often we can accommodate last minute requests, but acceptance of these is entirely dependant upon availability, and we do not recommend at all that you chance a last minute booking, and be disappointed.

7. I'll need a cutting cake as well, can Just Cupcakes! do those too?
Yes, certainly! We offer a cutting cake service in sizes up to 6" diameter, in round, square and heart shapes.

Cutting cakes are approximately 4" in height, and are baked in either the same flavour as your cupcakes, or a complimentary flavour.

It is quite popular for cutting cakes to be served to the bridal party, or the parents of the bride and groom, as a ceremonial part of the cake cutting.

All cutting cakes are decorated to match our cupcakes.

Chevy Cupcakes!

These cupcakes (and cookies) were made for the 55-56-57 Chev Club of Victoria annual Summer BBQ.

These are Vanilla Bean cupcakes, with rolled fondant over buttercream. The fondant is then lustered with blue edible lustre dust, and over-piped with royal icing, which was then painted with edible silver.

The cookies are vanilla bean sable with royal icing overlay, painted with edible silver, and trimmed with blue sanding sugar.

This is possibly my second most frequently asked question (next to "Where do you get the patience?"). There is no short answer - well, actually there is - you can have whatever flavour cake you want, from the sublime to the ridiculous! The easiest answer though, is this: You can have any flavour you want, except fruit cake.

My fruitcake recipe is such that it does not bake well in cupcake pans as the outside of their tins cannot be wrapped to protect them from the long baking time.

In terms of choices though, here are some of my most requested flavours:

1. Chocolate fudge. Halfway between a chocolate cake and a mud cake, this cake is intensely chocolatey. It is denser than a chocolate cake, but lighter than a mud cake, both in flavour and texture.

2. Vanilla Bean Classic. A moist, light buttercake that is made with lashings of genuine vanilla beans and butter, with not a drop of aritifical anything in sight.

3. Lemon Delicious. A very moist cake, made with lemon curd and white chocolate that is all at once rich, dense and satisfying, yet not cloyingly sweet like some cakes with white chocolate can be.

4. Mango Royale. A very moist cake, made with real mango puree and white chocolate that is a flavour sensation for those who want something to 'WOW' their guests with. Altogether an utterly decadent cake.

5. White Chocolate and Raspberry. A rich, velvety smooth cake with the addition of vanilla beans to undercut the sweetness of the white chocolate, and a very generous helping of fresh raspberries folded into the batter just before baking.

6. Almondine. A rich, dense and incredibly moist chocolate and almond cake that is incredibly chocolatey, with the almond richness coming as a secondary flavour, mellow and smooth and a perfect match for the richness of the chocolate.

7. Dulce de Leche. For those who love caramel, this cake has almost half a kilogram of caramel baked into every batch of batter! Sinfully delicious, this cake is smooth, luscious and decadent.

8. Miss Dixie's Classic Carrot. Spicy, sweet, nutty and everything a carrot cake should be. Loads of freshly grated carrot is uplifted by the combination of classic spices cinnamon, ginger and nutmeg, and boosted into legendary status by the starring additions of bourbon-soaked sultanas and oven-toasted pecans.

It's that time of year again, when the Wedding Expo season cranks itself back into gear after the Summer hiatus, and we hit the streets.

Each Expo will feature at least 6 cupcake designs; my first Expo in February will feature 7 designs, 6 of which are completely new designs for this year. Many will also feature a co-ordinating cutting cake, which is fantastic to serve to the wedding party, or the parents of the bride and groom, or, keeping with the oldest of the wedding cake traditions, kept until the christening of your first child* or your first wedding anniversay* (whichever comes first).

* For fruit cakes only!

Also, I will be launching a new ancillary range at the first expo of the year - no spoilers yet, you will have to wait til the day to see the results, but I'm very excited by the new direction we are heading in, and I'm sure all my brides will be too!

I made these cupcakes for the fabulous Doctors and Nurses at the Alfred Hospital who have been looking after my husband for the past while, as he battles to overcome a very serious blood infection. They are a tiny token of appreciation of the hard work they put in day after day, saving countless lives and keeping families intact.

Thank you seems such a small thing to say, but the power of those two words is immense.

Unfortunately, I have had to resign my membership of the Yarra Valley Regional Food Group, which means I will no longer be attending the Yering Farmer's Markets, held on the 3rd Sunday of every month, at Yering Station Barn, from 9am to 2pm.

(Even though I'm no longer going to be attending, if you get a chance to attend, please do so, as the market supports local producers, which is a rarity in markets these days!)

Now, don't worry, I resigned for good reasons - the first being that I am so busy with all your functions that taking two days out to attend the market simply isn't always possible - and the second (and most important!) reason being that I have moved out of the Yarra Vally, and so no longer qualify as a local producer to be able to attend.

Watch this space for updates as to market attendances for 2009!

Wow, what a weekend!!

Christmas cake orders open 1st October

Hi everyone!

Finally, the Christmas Cake book will be open for orders come October 1st.

Cakes are made to a very traditional Tennessee-en recipe, with the emphasis on fruit, cherries and bourbon!

Available sizes are:

Round - 6", 4"

Oval - 4" long x 3 " wide

Square - 4"

Hexagonal - 4"

All cakes are covered in marzipan and fondant in a variety of decorations, or can be decorated to a particular theme or style of your choice.

This year I have also managed to secure a limited number of silver presentation tins that will hold all 4" cakes, regardless of shape - ribbons of any shade can be added, and your Christmas gift is good to go!

Prices start at $15 each. (Presentation tins additional.)

The order book will close at the end of November, and last deliveries will be December 21st, so get in early to avoid disappointment!
